Which one you want
Hulu is owned by Disney, which also owns ABC, which is where Grey's Anatomy airs. That makes Hulu the show's home and the place current-season episodes turn up shortly after broadcast.
Netflix holds a licence to the back catalogue. Fine for a rewatch or a first run at it, no good for keeping up with a season in progress. If you don't know which situation you're in, start on Hulu and you can't get it wrong.

It started in March 2005 and hasn't stopped. At roughly 43 minutes an episode, watching it start to finish is about 330 hours, which is a fortnight of your life if you do nothing else.
People do it anyway. The show is built for it, with self-contained medical cases carrying the long relationship arcs underneath, so it works as background and still rewards you for looking up.
Where to start if not the start
Season one, if you have the patience. It's a 2005 network drama and it shows, but the cast that makes the show work is all present from the beginning and the early seasons are the ones everyone quotes.
You'll see people recommend skipping ahead to a stronger later season. Don't. Almost everything the later seasons land, they land on history the early ones built. A twentieth-season episode watched cold is just competent hospital television.
The spinoffs
Private Practice and Station 19 both cross over with the main show, and neither is required watching. Both are on Hulu, which is another point in Hulu's favour if you think you'll want them. Grey's is written so that anything load-bearing happens inside Grey's, and a crossover episode explains itself when it matters.
What it costs
Hulu with ads is $11.99 a month. Netflix is $8.99 with ads, $19.99 without. Any of those costs less for a month than buying one of the 22 seasons outright, which you can do through Amazon, Apple TV, Google Play and Fandango at Home if you'd rather own it.
